Excellence in the making.

Our Wagyu F1 cattle are created by crossing full blood Wagyu sires (males) with high-performing dams (females). Our Wagyu sires are predominantly from the famous Tajima bloodline of the Kuroge Washu breed. This is our preference, as even within Japanese Black breeds, the Tajima bloodline is renowned for producing the highest percentage of, and best quality marbling. The genetics of our female cattle are equally important, with only the highest quality procured from long standing partnerships with the most experienced and innovative cattle breeders and producers in Australia.

Perfection takes time.

That’s why our ICON cattle are raised and fed over 20-24 months. Throughout this time, they graze and roam in open pastures, and feed on additional premium rations at their will. They are then transitioned and nurtured with a scientifically tailored feeding regime for the following 12 months. This healthy, slow-growth maturity is the key to producing the superior marbling, texture and flavour ICON is revered for. It also means that supply of ICON is finite. It’s a beef that’s taken its time, and a beef that in turn invites you to take yours.

At the core of what we do is a deep respect for our cattle. We genuinely care about their welfare, and firmly place their whole of life experience at the forefront of what we do. Our production and processing facilities have been designed and developed to the highest environmental and animal welfare standards. Our cattle are antibiotic free and we have a zero-use policy for added hormones growth promotants. We wouldn’t have it any other way.
